Olive oil – Costa del riparo biologico
The Viola oil mill has been producing oil for more than 150 years respecting the environment that surrounds the plants: the fruits that give life to the Costa del Riparo extra virgin olive oil, grow on olive trees placed on steep slopes, which sink their roots into the cracks between the rocks. By virtue of this location (from which the name of the product also derives), the oil is characterized by fresh and bitter notes, like a mixture of herbs. What fascinates us about this oil are the characteristics with which the two cultivars from which it is extracted – Moraiolo and Frantoio – emerge, and the strict compliance with the organic dynamics that reward it as the best organic EVO oil in Italy, according to the Italia 2017 Oil Guide by Gambero Rosso.
