You might leave the box slightly open to reduce over humidity that might increase the development of geotrichum fungus covering the herb mix, over time. Aside from the visual aspect, this phenomena is totally normal and not to worry about. You can keep on eating your cheese.
Take out of fridge in AC room 10 min before serving.
